Oven Roasted Squirrel with Root Vegetables

Ingredients

  • 2 - 3 squirrels, cleaned left whole
  • 1 large onion, chopped, make it watery or use some onion juice
  • 4 - 6 tsp butter
  • 1 1/2 tsp salt
  • 4 carrots, chopped

Instructions

Soak the squirrels in milk overnight. Remove and pat dry.

Spread 2 tsp of butter on each squirrel.

Spread on some of the onion juice. Sprinkle with 1/2 tsp salt.

Place in baking dish and cover with the carrots and chopped onion and juice.

Bake at 350 degrees 45 - 60 minutes or until browned.

Remove and let rest a few minutes before serving.
