Rabbit Cacciatore

Ingredients

  • 1/4 cup flour
  • garlic salt
  • black pepper
  • 2 tbsp oil
  • 1/2 tsp oregano
  • 1/4 tsp ground cloves
  • 1 can(4oz) sliced mushrooms, drained
  • 1 medium green pepper, sliced into strips
  • 2 onions, sliced
  • 1 rib of celery, chopped
  • 1(15oz) can tomato sauce
  • 1 small can (2oz) ripe sliced olives

Instructions

~ 2 rabbits cut up in pieces

Shake the rabbit pieces in a bag with flour, salt and pepper. In a Dutch oven saute the pieces in oil until golden brown.

Add the remaining ingredients, except for the olives. Cover and simmer over low heat about 1 hour, or rabbit is tender.

Stir in black olives simmer 10 minutes more.

Serve with rice or noodles if desired.
