Wild Goose and Rice

Ingredients

  • 4 cups chopped goose
  • 1 1/2 tbsp butter
  • 1 medium onion, chopped
  • 2 cups rice
  • 5 cups chicken broth
  • salt & pepper
  • 1 cup shredded cheddar cheese

Instructions

In a large saucepan, saute the onion in the butter.

Add the goose, rice, chicken broth and salt and pepper.

Bring to a boil. Reduce heat, cover and simmer for 30 minutes.

Sprinkle with cheese before serving.
