Big Ass Bear Stew
Ingredients
- 4 lbs bear meat, cubed
- 4 cups all-purpose flour
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 4 tbsp butter
- 2 tbsp olive oil
- 2 -3 quarts water
- 1 onion, chopped
- 1 cup beef broth
- 4 bay leaves
- 2 lbs red potatoes, cubed
- 1 lb fresh mushrooms
- 5 carrots, sliced
- 2 turnips, cubed
Instructions
In a large mixing bowl, combine the flour, oregano, salt and pepper.
Heat the butter and oil in a large skillet over medium heat.
Place the bear meat a little at a time in the flour and coat well. Add to the hot oil.
Fry the meat until browned on all sides. Remove and drain on paper towels.
In a Dutch oven or large pot, add the water, cooked meat, onions, broth, bay leaves, potatoes, mushrooms, carrots and turnips. Stir well.
Cook over medium-low heat for 2 -3 hours stirring occasionally and adding water as needed.
Serve with biscuits or fresh baked bread.
