~ 5 - 6 lb wild turkey, cut in pieces ~ 2 qt's water ~ 2 lb fresh okra, trimmed and sliced ~ 1 green pepper, chopped ~ 1/2 cup celery, chopped ~ 2 tbsp butter ~ 1 tbsp flour ~ 2 cloves garlic, minced ~ 1/3 cup tomato paste ~ 3 bay leaves ~ 1tbsp salt ~ dash of cayenne pepper or Tabasco sauce

In a large soup pot saute the okra in the butter. Add the flour and cook a few minutes until it begins to turn brown.
Stir in the celery, garlic, and green pepper. Stir for another minute or so.
Add the water, bay leaves,1tsp salt, cayenne pepper, and tomato paste. Bring to a boil and simmer 15 minutes.
Add the turkey and simmer for 1 1/2 to 2 hours or until tender. Remove the turkey and remove the meat from the bones. Cut meat into small pieces and return to the gumbo.
Let gumbo simmer for 5 to 10 minutes. Taste and add rest of the salt if necessary. Add more salt if needed.
Serve over cooked white rice.
