Otto's Squirrel

~ 1 -2 squirrels, cut into serving pieces
~ flour
~ salt and pepper
~ oil
~ 1 can golden mushroom soup or regular cream of mushroom soup
~ 1 soup can water or milk
~ 1/2 package onion soup mix

Soak squirrel in salt water overnight. Remove and drain.

Season flour to taste with salt and pepper.

Heat some oil in a skillet. Roll squirrel in flour and add to hot oil.

Fry to golden brown on all sides. Remove and drain on paper towels.

Place squirrel in a deep Dutch oven.

In a large bowl, mix the soup, water or milk and soup mix together. Pour over squirrel.

Bake at 300 degrees for 2 – 3 hours or until meat is tender and starting to fall off the bones.

Add more water if necessary to keep from drying out.

Serve over hot biscuits with your favorite vegetables.
