Squirrel Pot Pie 2

~ 1 squirrel, cut into pieces
~ 1 1/2 cups flour
~ 2 tbsp onion powder
~ 1 tbsp garlic salt
~ salt and pepper
~ 1 cup milk
~ 1/2 cup each peas, carrots and corn, frozen or canned
~ 4 cups mashed potatoes
~ 1 can biscuits

Soak squirrel in salt water overnight.

Place squirrel in large pan and cover with water. Season with salt and pepper.

Boil until squirrel is done and starting to fall off bones. Remove the meat save the stock.

Reduce the stock down to 8 – 10 cups.

While the stock is reducing down, mix the flour, onion powder, garlic salt and pepper together in a bowl. Add just enough water to mix together.

Debone the squirrel meat.

When the stock is reduced down, stir in the flour mixture and bring to a boil while stirring. Heat until it starts to thicken.

Add the milk, meat and veggies. Stir together. You want it creamy but not too thick. Adjust seasonings as needed.

Spread the mashed potatoes in the bottom of a 9 x13 baking dish.

Spread on the squirrel mixture. Top with the biscuits.

Bake at 350 degrees for 30 – 40 minutes or until the biscuits are golden brown.

Remove from oven and let rest a few minutes.

Serve and enjoy.
