Roast Raccoon Braised in Red Wine Sauce

Ingredients

  • 1 raccoon, cleaned and quartered
  • 2 cups boiling water
  • 3 beef bouillon cubes
  • 2 large yellow onions, chopped
  • salt and pepper
  • 1 - 2 cups cheap red wine
  • 1/2 - 1 tbsp coriander seeds
  • 2 - 3 tsp dried rosemary
  • 2 - 3 tbsp brown sugar
  • 1/4 tsp cayenne pepper
  • 2 - 3 tsp Worcestershire sauce
  • 1 - 2 tsp honey

Instructions

Boil the raccoon in salt water for 30 minutes. Remove.

In a large bowl, mix the other ingredients together.

Place the meat in a 9" x 13" baking dish.

Pour on the wine mixture. Cover and bake 2 - 3 hours at 325 degrees.

Baste every half hour or so.

Remove from oven and let set a couple of minutes.

Serve and enjoy.
