Roast Raccoon Braised in Red Wine Sauce
Ingredients
- 1 raccoon, cleaned and quartered
- 2 cups boiling water
- 3 beef bouillon cubes
- 2 large yellow onions, chopped
- salt and pepper
- 1 - 2 cups cheap red wine
- 1/2 - 1 tbsp coriander seeds
- 2 - 3 tsp dried rosemary
- 2 - 3 tbsp brown sugar
- 1/4 tsp cayenne pepper
- 2 - 3 tsp Worcestershire sauce
- 1 - 2 tsp honey
Instructions
Boil the raccoon in salt water for 30 minutes. Remove.
In a large bowl, mix the other ingredients together.
Place the meat in a 9" x 13" baking dish.
Pour on the wine mixture. Cover and bake 2 - 3 hours at 325 degrees.
Baste every half hour or so.
Remove from oven and let set a couple of minutes.
Serve and enjoy.
