Raccoon And Kraut

~ 1 raccoon, cleaned, fat and glands removed
~ 1/2 cup water
~ 3 lbs potatoes, peeled
~ 2 medium onions, coarsely chopped
~ 1 quart sauerkraut, undrained
~ salt and pepper

Par boil the raccoon for 30 minutes or so. Remove and let cool.

When cool, remove any remaining fat.

Place in pressure cooker with 1/2 cup water. Cook for 30 minutes on 15 lbs of pressure.

Remove and let cool.

Once cool, remove meat from bones and place back in pressure cooker.

Add the potatoes, onions and kraut with juice. Salt and pepper to taste.

Cook for 20 minutes at 10 lbs of pressure.

Serve with fresh baked rolls and enjoy.
