Roast Beast

~ 1 medium raccoon, cleaned with all of the fat and musk glands removed
~ 2 – 3 potatoes, coarsely chopped
~ 1 medium onion, chopped
~ 2 -3 carrots, chopped or a couple handfuls of baby carrots
~ Your favorite veggies you normally put in pot roast, optional
~ 1 can cream of mushroom soup
~ 1 can Rotel tomatoes
~ 1 tsp garlic powder
~ salt and pepper to taste

Mix the veggies, soups and seasonings together.

Place the raccoon in a roasting pan or crock pot.

Pour the veggie/soup mixture on and around it.

Cover and bake at 300 degrees for 1 hour or until the legs move easily and juices run clear or place everything in a crock pot and cook on low for 8 hours.

Remove the roast and carve.

Serve with the veggies and enjoy.
