Goose Balls
Many thanks to Dale Ginkens for this recipe.

~ 1 - 2 goose breasts, cut into 3" cubes
~ beer
~ Italian dressing
~ 1 large onion, cut into 2" pieces
~ jalapeno peppers, sliced
~ bacon

In a bowl, mix equal parts of beer and Italian dressing together.

Place the goose cubes in a large zip-lock bag and pour in the beer/dressing mixture.

Seal and refrigerate overnight.

Remove meat and drain.

Place a piece of onion on one side of meat cube and a slice of pepper on the other. Wrap with bacon and secure with toothpicks. Repeat.

Place on heated grill and cook over medium-low heat until bacon is done. Turn as needed.

If you don't like spicy, remove the pepper before eating.

Serve and enjoy.
