~ 4 trout, dressed (about 1/2 pound each) ~ 8 slices of bacon ~ 1 medium onion, chopped ~ 1 celery stalk, chopped ~ 1 cup fresh bread crumbs ~ 2 tbsp butter or margarine ~ 1 tsp dried thyme ~ salt and pepper ~ celery leaves or parsley for garnishing

Preheat oven to 450 degrees.
Melt butter or margarine in a skillet. Add onion and celery, cook until tender, about 5 minutes. Remove from heat.
Add the bread crumbs, thyme, and season with the salt and pepper to taste. Mix well.
Season the cavity of each trout with salt and pepper.
Stuff each trout with the bread mixture, dividing it evenly between the fish. Secure the openings with toothpicks if necessary.
Wrap 2 slices of bacon around each trout.Arrange in a single layer in a baking dish.
Bake for 35-40 minutes or until the fish flakes easily with a fork and the bacon is crisp.
Garnish with celery leaves or parsley and serve.
