Dave's Fantastic Fish Batter
Thanks to David Cox of Mississippi for sharing his recipe.

~ your favorite fish fillets
~ 1 cup cornmeal
~ 4 tbsp Italian dressing
~ 1 tbsp mayonnaise or 1 small egg
~ dash of garlic powder
~ 1/2 cup water

Mix all ingredients together in a bowl. If using the egg, beat it first in the bowl and then add the rest of the ingredients.

Cut fish into strips.

Dip fish into the batter and fry in peanut oil until golden brown.

Drain on paper towels.

Serve with your favorite side dishes.

Enjoy!

* You can increase the recipe, just use 1/2 cup water for every cup of cornmeal.
