Baked Possum & Sweet Tators

~ 1 large opossum, skinned and dressed, all fat removed
~ 1 lb sweet potatoes, cubed
~ 1/4 cup soy sauce
~ 1/4 cup Allegro marinade
~ 1 clove garlic, crushed
~ crushed red pepper
~ salt and pepper
~ 1 tsp sage
~ brown sugar
~ cinnamon
~ water

Combine the soy sauce and Allegro sauce together.

Place the possum in a large roasting pan.

Pour the sauce mixture over the top.

Rub the crushed garlic on the possum.

Seasoning liberally with the red pepper, salt and pepper. Sprinkle on the sage.

Place cubed tators around possum.

Add 1" water to pan.

Sprinkle the tators with brown sugar and cinnamon.

Cover with foil and bake at 350 degrees for 1 1/2 - 2 hrs.

Check water level ocassionally and add as needed. You don't want tators getting too dry.

Remove from oven and let rest for a few minutes.

Serve and enjoy.
