Rob's Best Duck Yet

~ 1 whole duck, plucked not skinned
~ 1/2 cup soy sauce
~ 1/2 cup orange juice
~ 2 tbsp honey
~ dried minced onion
~ ground ginger
~ 1 fruit cup
~ handful of croutons
~ 1 medium onion, chopped

* Multiple quantities as needed for more ducks.


Mix the soy sauce, orange juice, honey, minced onion to taste and ground ginger to taste together in a bowl.

Pour into a large vacuum bag or a large zip lock bag.

Add the duck and roll around to coat evenly. Seal the bag and place in frig overnight.

Remove from bag.

Drain juice from the fruit cup.

In a bowl, mix the fruit, croutons and chopped onion together.

Stuff into the duck.

Place duck in a roasting pan. Cover with lid.

Bake at 350 degrees for about 1 1/2 hours or until internal temperature reaches 175F degrees.

Uncover and baste with drippings or more honey and cook another 10 minutes.

Remove from oven and let set 5 - 10 minutes.

Serve and enjoy.
