Grilled Dove Texas Style

~ whole dove breasts, 6 per person
~ pineapple juice
~ soy sauce
~ minced garlic
~ grated ginger
~ sliced jalapeno pepper, remove seeds and meat for less heat
~ sliced onion
~ bacon
~ fresh chopped cilantro

In a large bowl, mix equal parts pineapple juice and soy sauce together.

Stir in some minced garlic and ginger.

Adjust to taste. You’ll have to play around with the ingredients to get the taste you want.

Place the breasts in a large zip-lock bag and add the juice mixture. Seal and refrigerate at least 4 hours. Turn often.

Remove and drain.

Slice down each side of the breast bone. Insert a pepper slice in one side and an onion slice in the other.

Lay out a strip of bacon and sprinkle with cilantro.

Place a dove breast on the bacon and roll up. Secure with toothpicks.

Grill over medium heat until bacon is done.

Serve and enjoy.
