Baked Dove with Vegetables

~ 6 doves, cut in half or 12 breasts ~ 3 tbsp butter ~ 6 scallions ~ 1 carrot, chopped ~ 1 stalk celery, chopped ~ 1/2 green pepper, chopped ~ 1/2 cup chicken broth ~ 1/2 cup white wine ~ 1 bay leaf ~ 1 tsp marjoram

In a skillet, melt the butter over medium heat. Add the dove and brown on both sides. Remove the doves.
In the same skillet, saute the scallions, carrot, celery and pepper.
Meanwhile, in a suace pan, bring the broth and wine to a boil. Remove from heat.
Add the bay leaf, marjoram and boiling broth mixture to the vegatables. Stir together.
Grease a casserole dish and place the doves in the bottom.
Pour the vegetable mixture over the doves.
Cover and bake for 20 - 25 minutes at 350 degrees.
Serve and enjoy!
