Rosina Boi (Raisin Pie)
Try this Dutch pie recipe sent in by April Barkulis.

~ 1 cup raisins
~ 2 cups water
~ 1 egg, beaten
~ 1 1/2 cups sugar
~ 4 tbsp flour
~ pinch of salt
~ 1 lemon, juice and grated

Soak raisins in water until soft and plump.

Make pie crust using a rich pastry or buy a ready made. Chill.

In a bowl mix eggs and sugar. Add flour, salt, raisins, lemon juice, and water.

Place in top of double boiler over boiling water and cook gently for 15 minutes.

Add grated lemon rind and stir.

Cool.

Line pie tins with pastry and fill shells with mixture. Crisscross strips of pastry for tops.

Bake at 375 degrees for about 40 minutes.

Serve and Enjoy!

Makes 2 - 8 inch pies.
