Zucchini Nut Bread

~ 3 eggs
~ 1 cup oil
~ 2 cups brown sugar
~ 2 cups raw grated zucchini
~ 3 cups flour
~ 1 Tsp salt
~ 1 Tsp cinnamon
~ 1 Tsp baking soda
~ 1 Tbsp vanilla
~ 1 cup chopped pecans
In a large bowl beat eggs. Add oil, brown sugar and zucchini. Mix well.

In another bowl combine flour, salt, cinamon and baking soda. Stir this into zucchini mixture. Add vanilla. Fold in nuts.

Grease 6 small loaf pans. Pour in batter. Bake at 350 degrees for 50-60 minutes. Cool 5 minutes. Remove from pans.

This moist bread freezes well wrapped in plastic wrap and makes a great homemade gift for any occasion!
