Lemon Nut Bread

~ 1/2 cup shortening
~ 1 cup sugar
~ 2 eggs slightly beaten
~ 1 2/3 cup sifted flour
~ 1 tsp baking powder
~ 1/2 tsp salt
~ 1/2 cup milk
~ 1/2 cup chopped pecans
~ grated zest of 1 lemon

Topping
~ 1/4 cup sugar
~ one can frozen lemonade, thawed
Mix 1/4 cup sugar and 3 Tbsp. lemonade concentrate in small bowl set aside.

Cream shortening with sugar, add slightly beaten eggs and blend well. Sift flour with baking powder and salt. Alternately add the flour mixture and milk to the shortening mixture.

Stir constantly. Stir in nuts and lemon zest. Pour batter into 3 greased small loaf pans. Bake at 350 degrees for 1 hour. Remove from pans and immediately brush with topping.
This bread doubles easily, freezes well wrapped in plastic wrap and makes a wonderful homemade gift for any occasion!
